Blast-Off Burrito


Yield: 4 servings (age 3-5 years)

Ingredients: Measure:
Eggs 4
Cheddar Cheese (shredded) ¼ cup
Tortilla (flour), thawed 2
Optional Ingredients:
Sour Cream Salsa
Diced peppers (green & red)
Corn (canned or frozen)
Black beans
For added fun and nutrition, allow children to “dress up” their burrito with a variety of colorful ingredients and flavors.

Portion sizes:
Age 1-2: 1/2 Burrito *
Age 3-5: 1/2 Burrito *
Age 6-12: 1 burrito**

*1/2 burrito provides ½ grain/bread (and meat/meat alternate)
**1 Burrito provides 1 grain/bread (and meat/meat alternate)

Directions:
  1. Crack eggs into a bowl and mix until well combined.
  2. Scramble eggs over medium heat.
  3. Place 1/2 of scrambled egg mixture (cooked) into the center of each tortilla. Sprinkle with 1/8 cup shredded cheese (1/2 ounce). Fold the tortilla from the bottom first, sides second and top last (like an envelope).
  4. Serve warm.
  5. Serve with salsa and sour cream, diced green & red peppers, corn, or black beans for added fun and nutrition.
