Apple Pie Parfait

The 2005 Dietary Guidelines for Americans recommended at least THREE servings of Whole Grains each day. 9 out 10 Americans, including children are not getting the recommended daily servings of whole grains. Whole grains such as Oatmeal offer many health benefits including heart healthy fiber, essential vitamins and nutrients. Enjoy the following recipe, packed full of whole grains, not to mention calcium, protein and a whole lot of FUN!

Apple Pie Parfait

Yield: 1 parfait

Ingredients: Measure:
Vanilla Lowfat Yogurt 6 ounces
Cinnamon, ground Pinch
Brown sugar 1 teaspoon
Apple Slices (fresh, canned or frozen) -diced 2 tablespoons
Awesome Oatmeal Cookie, crushed ** 2 tablespoons

Preparation:
  1. Mix ground cinnamon into yogurt.
  2. Layer: Yogurt, Brown sugar, Apple slices, Crushed Oatmeal Cookie
  3. Repeat layer and serve


**Awesome Oatmeal Cookie

Yield: 36 each

Ingredients: Measure:
Brown Sugar, firmly packed 1 cup
Egg 1 each
Vegetable Oil ½ cup
Applesauce, unsweetened ½ cup
Vanilla 1 teaspoon
Whole Wheat Flour ¾ cup
All purpose Flour ½ cup
Baking Soda 1 teaspoon
Salt ½ teaspoon
Oatmeal (quick or old fashioned, uncooked) 2 cups

Preparation:
  1. Heat oven to 350ºF. In large bowl, beat brown sugar, egg, oil, applesauce and vanilla on medium speed of electric mixer until combined. Add combined flours, baking soda and salt; beat on low speed just until blended. Stir in oats and "mix-ins."
  2. Drop dough by level measuring tablespoonfuls about 2 inches apart onto ungreased cookie sheets.
  3. Bake 9 to 10 minutes, until light brown. (Do not overbake. Centers will appear soft.) Cool 1 to 2 minutes on cookie sheets; transfer to wire racks. Cool completely. Store tightly covered.
